Malcolm’s Red Cabbage

INGREDIENTS

1 sm Onion; chopped
2 tb Oil
1/2 lg Cooking apple; chopped
1 sl Streaky bacon; chopped
1/2 lg Red cabbage; coarse shredded
15 fl Beef stock
3 tb Vinegar
2 Cloves
1 pn Caraway seed
Salt & pepper

INSTRUCTIONS

In a large casserole, fry onion in butter/oil till soft. Add bacon and
apple and fry a couple of minutes more. Stir in cabbage and then add enough
beef stock almost to cover cabbage. Now add vinegar and seasonings,
grinding the caraway lightly, if you don't much like the flavour, and stir
together again. Bring to boil, cover tightly and put into pre-heated 325F
Mk 3 oven for several hours, until really tender.
