It will sustain the soul in the darkest and most dreary places of this world. It will hold in check the demons of despair, and stifle the power of discouragement and hopelessness. It is the brightest star that ever cast its radiance over the darkened soul, and one that seldom sets in the gloom of morbid fancies and forboding imaginations.

Mango-corn Relish

INGREDIENTS

2 Ears corn, unshucked
1 Mango, peeled seeded and
cut in 1/4" dice
2 T Finely diced red onion
2 T Finely diced red pepper
1 T Finely chopped fresh
cilantro
1 t Fresh lime juice
1 t Maple syrup
Salt

INSTRUCTIONS

Preheat oven to 350 degrees. Place unshucked corn on a baking sheet in
preheated oven for 20 minutes. Remove and allow to cool. Shuck and
remove silk. Cut kernels from cob, avoiding the chewy heart alongside
the cob. Combine corn with remaining ingredients and let stand for 1
hour before serving.  Served as part of: VENISON CHILI IN TORTILLA CUPS
