Melon, Mint And Ginger Soup with Nectarine

INGREDIENTS

1 Ripe Galia melon
1 ts Fresh sliced ginger
1 Sprig mint; stalk removed
75 ml Orange juice
1 Ripe nectarine

INSTRUCTIONS

Cut the melon in half, remove the seeds and scoop out the flesh.
Liquidise the melon with the ginger and mint (retaining one leaf per
person), add the orange juice and chill.
Serve in bowls or scooped-out melon shells, and lay a couple of wafer-thin
nectarine slices on top with a mint leaf.
