Michiko’s Rice And Chicken

INGREDIENTS

2 Chicken breasts, deboned and
boiled chopped small
1 Shitaki mushrooms, soaked in
warm water for about 30
minutes de-stemmed and
sliced
3 T Mirin sweet seasoning
3 T Sugar
Soy sauce
4 c Short grained rice, washed
1/4 c Diced or sliced, very small
carrots or green beans
up
to 1/2

INSTRUCTIONS

Mix sugar and Mirin, set aside. In rice cooker, have rice with water
to proper line for 4 cups. Pour Mirin/ sugar mixture on top of rice.
Pour soy sauce, enough to make it light brown. Gently place chicken,
sliced shitake mushrooms, carrots or green beans on top rice. Cook in
rice steamer until done. Let stand in covered rice steamer an
additional 30-45 minutes before opening, and mixing together. Eat.
This is absolutely delicious. allot of times I leave out the meat and
add another 1/2 again amount of Shitakes.  Posted to recipelu-digest
