Trials should not surprise us, or cause us to doubt God's faithfulness. Rather, we should actually be glad for them. God sends trials to strengthen our trust in him so that our faith will not fail. Our trials keep us trusting; they burn away our self confidence and drive us to our Savior.

Microwave Lime Custard

INGREDIENTS

3 tb Sugar
1 tb Cornstarch
2/3 c Milk
1 Egg yolk; lightly beaten
1/2 ts Lime rind
2 tb Lime juice
1 ts Butter
Heavy whipping cream; whipped

INSTRUCTIONS

In 2 cup glass measuring cup combine sugar and cornstarch. Add milk and
whisk until smooth. Microwave on High for 1 1/2 to 2 minutes until slightly
thickened. Whisk twice during cooking. Whisk 1/3 of the milk intoegg yolk.
Whisk well and return to custard mixture.  Microwave on High for about 30
seconds or until thickened. Whisk once during cooking. Stir in lime rind,
lime juice and butter until butter is melted. Spoon into small serving
dishes or custard cups. Chill for 1 hour or until cold. Before serving,
pipe softly whipped and lightly sweetened cream over custards. Serve.
Serves 2.
