Min’s Noodle Kugel

INGREDIENTS

8 oz Wide noodles
4 oz Butter or margarine
6 Eggs
1 c Sour cream
1 c Cottage cheese
1/2 c Sugar
1/2 c Milk
1/2 c Golden raisins
1/2 lb Dried apricots (chopped)
1 c Corn flake crumbs
1 c Brown sugar
1/4 c Butter or margarine – melted

Here's a couple of koogle recipes from California Kosher that sounded
different and interesting.
Cook noodles until tender.  Drain and add butter (or margarine) and set
aside Beat together: eggs, sour cream, cottage cheese, sugar and milk.  Add
raisins and apricots.  Add mixture to noodles.  Pour into a greased 8 x 12
baking dish.  Mix together topping ingredients. Sprinkle over kugel.  Bake
at 350 degrees for one hour. Makes 10-12 servings
**to reduce calories and cholesterol you can reduce margarine to 2
Tablespoons, use light sour cream and egg substitutes.
