1/4 c Chopped scallions, white
part only
1 T Dijon mustard
1 T Seasoned rice wine vinegar
or to taste
1/3 c Coarsely-chopped fresh mint
leaves loosely packed
1/2 c Peeled and seeded cucumber
1 c Yogurt
1 T Fruity olive oil
Salt, to taste
Freshly-ground black pepper
to taste

INSTRUCTIONS

Combine all ingredients in a blender or food processor and blend until
