Mint Carrot Pineapple Salad

INGREDIENTS

4 md Carrots; Shredded, About 2 Cups
3/4 c Pineapple; Finely Chopped
1/3 c Fat Free Plain Yogurt
2 tb Fresh Mint Leaves; Chopped
2 tb Lemon Juice
1 ts Honey
1/2 ts Ground Cinnamon
1/4 ts Ground Cumin
3 c Leaf Lettuce; Torn Into Bite Sized Pieces, About 1/2 Large Head

INSTRUCTIONS

Mix all of the ingredients except the lettuce in a glass or plastic bowl,
blending well.  Cover and refrigerate about 2 hours or until well chilled.
Serve on the lettuce.
