INGREDIENTS

1 Orange-fleshed melon; seeded flesh in lg. cubes
1 ts Grated orange rind
1/4 c Orange juice
2 tb Sugar
1/3 c Raspberry vinegar
1/4 c Fresh mint; finely chopped

INSTRUCTIONS

Put melon cubes in serving bowl.  Combine other ingredients; mix well to
dissolve sugar.  Pour over melon. Chill, covered, for an hour to let
flavors blend.
