We are often unable to see and understand the reasons and causes for specific events in our lives, in the lives of others, or in the history of the world. But our lack of understanding does not prevent us from believing God.

Minted Potato Salad

INGREDIENTS

4 md Potatoes
1/2 c Fresh parsley;chopped
3 tb Olive or vegetable oil
2 tb Lemon juice
1 tb Chopped fresh mint
1 Clove garlic; minced
1/2 ts Salt; optional
1 pn Ground pepper

INSTRUCTIONS

In a saucepan, cook potatoes in boiling water until tender. Peel and cube;
place in a medium bowl. Combine remaining ingredients in a small bowl. Add
to potatoes and mix well. Chill for at least 1 hour prior to serving.
