INGREDIENTS

6 c White or red potatoes;
1 tb Soft marg
1/2 c Minced fresh mint
1 tb Fresh lemon juice

INSTRUCTIONS

Quarter and slice potatoes. In large saucepan, boil potatoes in water until
tender, about 10 min. Drain.
In large saute' pan, melt marg & saute' mint with lemon juice for 1 min.
Add potatoes and toss to coat. Reheat & serve.
