Moist Date And Walnut Cake

INGREDIENTS

125 g Raisins
250 g Dates; chopped
185 g Sultanas
275 g Unsalted butter
1 400 gram tin sweetened condensed milk
275 ml Water
60 g Walnuts; chopped
150 g Plain flour
150 g Wholemeal self-raising flour
1/2 ts Bi-carbonate of soda
60 g Glace cherries; halved
1 tb Orange marmalade

INSTRUCTIONS

1. Place raisins, dates, sultanas, butter, condensed milk and water in a
large saucepan and bring to the boil. Simmer gently, stirring occasionally,
for 5 minutes. Set aside to cool.
2. Pre-heat oven to 180deg.C. Line a 30cm X 20cm cake tin with Glad Bake.
3. Sieve flours and bi-carbobnate of soda into a large mixing bowl. Add
fruit mixture with cherries and marmalade and mix well. Spoon into prepared
tin and bake about 30-40 minutes or until golden on top and cooked when
tested with a wooden skewer. Remove from oven and cool on a wire rack.
