Moist Tender Duck

Meats Game 4 Servings

INGREDIENTS

2 Wild ducks
1 Apple
1 Potato
Salt to taste
Pepper to taste
4 Ribs celery -or-
4 Carrots
1 cn (10.75-oz) beef consomm. plus
6 oz Water -or-
2 c Beef bouillon

INSTRUCTIONS

To prepare ducks for baking in crockpot, wash ducks and pat dry. Quarter
apple and potato. Stuff each duck with apple and potato. Sprinkle ducks
with salt and pepper. Place celery or carrots in bottom of crockpot. Lay
ducks on top. Pour bouillon over ducks and cover. Cook ducks on high heat
for 4 to 4-1/2 hours. Test breasts for doneness. Remove ducks and cover
with your favorite sauce. This is especially good with Raspberry Sauce (See
recipe).  Yield: 4 servings.
