Molasses Cake

INGREDIENTS

1 c Sugar
3 c Flour
1/2 c Shortening
1/2 c Molasses — * see note
1 c Water — very hot
1 ts Baking soda
1 tb Water — cold
1/2 ts Salt
1 ts Cinnamon — ground
1 ts Cloves — ground
1 ts Nutmeg — ground

INSTRUCTIONS

Mix sugar, salt, flour and shortening like for a pie crust, reserving 1/2
cup for topping. Mix the baking soda with the cold water and add along with
the spices, molasses, adding the hot water last. Mix well, then pour into a
greased 9 x 13 inch cake pan. Sprinkle reserved crumbs over the top and
bake at 350 degrees for 45 minutes to 1 hour.
Note: if you can find Barbados Molasses use it, otherwise, baking molasses
will do.
