Mom’s Okra and Tomatoes

Bacon, Rice, Shrimp, Skillet/wok, Tomatoes 8 Servings

INGREDIENTS

4 sl Bacon; diced
2 Diced onions
1/2 Green pepper; diced
1 Stalk celery; diced
1 cn (28-30 oz) tomatoes; undrained
1 pk (9 oz) frozen okra; sliced
Cooked rice for 8
1 cn (small) shrimp; drained (opt.)

INSTRUCTIONS

Brown bacon slightly. Add and cook over Low heat, all diced vegetables. Add
tomatoes and continue to simmer. Wash, stem and cook okra separately.
Drain. Add okra to other ingredients + some of okra cooking liquid. Season
with salt and pepper to taste. Serve over cooked rice. Can add shrimp with

NOTES : I usually buy presliced frozen okra.
