Monkfish With Lemon Butter

INGREDIENTS

3 c Water
1 lb Fresh monkfish fillets
1/2 c Melted butter, 1 stick
2 T Lemon juice
1 T Freshly chopped parsley

INSTRUCTIONS

In frypan bring water to boil; add monkfish. Cover & simmer 6-8
minutes. Carefully remove fish from water. In small bowl blend  butter,
lemon juice & parsley. Serve immediately with Lemon Butter.  File
