Green beans – broken into 3 cm pieces |

Onion – sliced finely |
|
|
Garlic – sliced finely |
|

Olive oil |
|

Tomato – seeded and chopped |
|

Salt and freshly ground pepper |
|
|
Freshly chopped mint and parsley |
INSTRUCTIONS
Gently saute onion and garlic in olive oil. Stir in beans and cook for a
couple of minutes. Add chopped tomatoes, salt, pepper and a tablespoon or
two of water. Cover and very gently cook until tender.
Just before servicing stir in fresh herbs, this can be eaten warm or hot.
It is also good cold with a drizzle of red wine vinegar, extra virgin olive
oil and more fresh herbs. Serve with BBQ'd lamb.
Why not add a little dried oregano and diced potato.
