Mozarella, Zucchini And Anchovy Toasts

INGREDIENTS

1 T Olive oil
4 Zucchini, trimmed and sliced
2 T Parsley, finely chopped
4 large fresh Italian
country bread 3/4 inch
thick
12 Mozzarella cheese
8 Anchovy fillets, drained and
chopped

INSTRUCTIONS

Preheat oven to 400F. Heat olive oil in large skillet over med-high
heat. Add zucchini and parsley and saute' until zucchini is tender,
about 5 min. Remove from heat. Place bread slices on large baking
sheet. Bake until crisp, about 10 min. Arrange 3 slices mozzarella on
each bread slice. Top with zucchini, dividing equally. Sprinkle with
anchovies. Return to oven and bake until cheese melts, about 5 min.
