INGREDIENTS

1/2 c All-purpose flour
1 ts Salt
1/4 ts Black pepper
6 Boneless skinless chicken breast halves; pounded to 1/4 inch
; thickness
3 tb Butter
3 tb Olive oil
1/2 lb Fresh mushrooms; sliced
3/4 c Marsala wine
2 lb Potatoes; peeled and cut into
; 2-inch pieces
Salt
3 tb Butter
1/3 c Milk
Ground white pepper

How To Prepare the Chicken:
In a shallow dish, combine the flour, salt and pepper. Then coat the
chicken with the flour mixture and set aside. Next, in a large skillet,
heat butter and oil over medium heat and cook the chicken for 5 to 7
minutes, or until it is browned. Turn the chicken halfway through the
cooking.
Remove the chicken to a platter to keep it warm.
Add mushrooms to the skillet and saute for them for 4 to 5 minutes, or
until tender.
Then return the chicken to the skillet sand add the wine, and reduce the
heat to low. Cook the chicken for 4 to 5 minutes, or until the sauce
thickens and the chicken is heated through.
How To Prepare the Mashed Potatoes:
Combine in a medium sauce pan, potatoes and enough water to cover them. Add
the salt and say to bring to a boil over high heat.
Reduce the heat to low and to simmer the potatoes covered for 40 minutes or
until tender. Drain the potatoes.
Return the potatoes to the pan and set over low heat, and mash the potatoes
with a potato masher until smooth. Add butter and milk, continuing to mash
until well blended. Add salt and pepper to taste.
For Fun and Colorful Potatoes:
"Hot Pink" Potatoes: Add one can of beets to a pot of cooked potatoes and
mash. You can puree the beets in a food processor for a smoother mixture.
"Green " Potatoes: Add a 10-ounce package of spinach to a pot of cooked
potatoes.

Marsala and mashed potatoes.
