Mr Food’s Shrimp ‘n’ Pasta

INGREDIENTS

8 oz Pasta — rigotoni or other
1/4 c Olive oil
1 lb Shrimp, cooked — peeled &
Deveined
1 Red and green bell peppers
Cut in thin strips
1 c Sliced mushrooms
3 Cloves garlic — minced
1 tb Dried basil
2 Medium-sized tomatoes —
Coarsely chopped
1 c Picante sauce
Grated parmesan cheese

INSTRUCTIONS

Cook the pasta according to the package directions; drain and set aside in
a large bowl. Meanwhile, heat the oil in a large skillet over medium-high
heat.  Add the shrimp, peppers, mushrooms, garlic and basil.  Cook for 3 to
4 minutes, stirring frequently, until the shrimp are warmed through and the
peppers are almost tneder.  Stir in the tomatoes and picante sauce; simmer
for 2 top 3 more minutes, or until warmed through, stirring frequently. Add
to the cooked pasta; mix well.  Serve topped with parmesan cheese and
additional picante sauce, if desired.
Yield: 4 serving
