Mrs Kitching’s Cracker Pudding – A Skipjack Recipe

INGREDIENTS

30 Unsalted soda crackers
1 c Water
2 Eggs, beaten
1 pn Salt
2 c Sugar
1 t Vanilla
1 13-oz evaporated milk
1/4 c Butter melted

INSTRUCTIONS

Put crackers in a bowl and soak in 1 cup water until soft. Add eggs,
salt, sugar, and vanilla. Stir to make mixture uniform. Add  evaporated
milk and whole milk. The pudding is very thin, as it is  supposed to
be. Pour butter into a 9 by 13-inch baking dish, and pour  pudding over
it. Bake at 350 degrees for 45 minutes to one hour.  Recipe from "Mrs.
