Mulligatawny Soup

INGREDIENTS

2 Onions
1 Clove garlic
2 Carrots
1 Cooking apple
3 oz Cooked lentils or white beans
2 pt Stock
2 Bay leaves
1 tb Garam masala or curry powder
1 tb Lemon juice
Salt and black pepper
Fresh coriander leaves

INSTRUCTIONS

Peel and chop the onions and garlic, and fry in a little of the stock until
starting to brown. Add garam masala, finely chopped carrots and chopped
apple. Mash or liquidize the beans, and stir into the soup. Pour in the
rest of the stock and add the bay leaves. Check seasoning, bring to a boil
and simmer for 20 minutes. Add the lemon juice, and add a little more garam
masala or black pepper before serving. Garnish with chopped coriander
leaves.
