INGREDIENTS

3/4 c Olive oil
1 c Sliced assorted fresh wild mushrooms
(Chanterelles; Shiitake, Oyster, Black
Trumpets)
1 Egg; (optional)
4 tb Dry sherry
2 tb Finely-chopped shallots
2 tb Finely-chopped garlic
2 tb Fresh lemon juice
1 ts Salt
Freshly-ground black pepper

INSTRUCTIONS

Heat 1/4 cup oil in a medium skillet and saute mushrooms 3 minutes.
Transfer mixture to food processor and add egg (if using). Process 30
seconds and add remaining ingredients and 3 turns pepper. Process 15
seconds and with machine running, add remaining oil until thoroughly
blended.
