INGREDIENTS

1 lb Lean minced beef
1 sm Pack frozen peas
5 tb Vegetable oil; (be generous), up to

2 md Sized onions
2 ts Crushed garlic
1 ts Crushed ginger
2 Whole cloves; up to 3
2 Whole black peppercorns; up to 3
2 Cinnamon sticks; up to 3
1 Black cardamom pod; crushed
2 Green cardamom pods; crushed
1/4 ts Turmeric powder
1 1/2 ts Coriander powder
1 ts Cumin powder
Salt and pepper to taste
Fresh coriander leaves; roughly chopped to
; garnish

INSTRUCTIONS

Fry onions in oil until just brown - don't overcook. Add all whole spices,
including the crushed cardamom pods. Add ginger and garlic. Add mince. Add
all spice powders and salt and pepper. Stir over medium heat for 5-10
minutes. Then add approximately 4-5tbsp water to pan. Cover and cook over
low to medium heat until water has substantially reduced and mince is
almost dry.
Increase heat and fry for several minutes. Add frozen peas and a little
water, cover and cook until peas are done. Garnish with plenty of fresh
coriander leaves.
