New Potatoes with Thyme

INGREDIENTS

2 tb Butter
2 tb Olive oil
2 1/2 lb Red potatoes; sliced
3 tb Chopped fresh thyme
1 tb Minced garlic
1 1/2 c Chicken broth

INSTRUCTIONS

Melt butter with olive oil in large heavy skillet. Add potatoes, thyme and
garlic. Sprinkle with salt and pepper. Add broth and bring to a boil.
Reduce heat, cover and simmer until tender, stirring occasionally. Add more
broth, if necessary. Yield: 6 servings.
