Oven-baked Parmesan Chicken

INGREDIENTS

1 c Bread crumbs
1 c Grated Parmesan cheese
2 T Fresh Parsley, chopped
2 Garlic cloves, chopped
Salt, to taste
Black pepper, to taste
3/4 c Margarine, melted
Chicken

INSTRUCTIONS

You will need 2 small chicken fryers, 2-3 pounds each. Cut the
chickens into serving-sized pieces.    In a small bowl combine bread
crumbs, cheese, parsley, garlic which  has been finely chopped but not
minced, salt and black pepper. Place  this mixture in a shallow bowl.
2. Place 1/2 cup of melted margarine  in a shallow dish. 3. Preheat
oven to 350 degrees. Have ready a  shallow baking pan. 4. Dip chicken
pieces first in the margarine,  then into the bread crumb mixture.
Place in baking pan in a single  layer. Drizzle rest of melted
margarine evenly over chicken. 5. Bake  for 45 minutes, turning only
once. Chicken will be crusty and golden  brown. Recipe By     : Jo Anne
