Oven-Roasted Apple Saffron Jam

INGREDIENTS

2 Star anise
4 Cloves
2 Cinnamon sticks
4 Mint leaves
Zest from 1 lemon
2 lb Sugar
6 lb Apples, peeled and chopped into large pieces
Juice of 1-1/2 limes
1 c Water
2 "shavings" from a piece of saffron, (2 to 3)

INSTRUCTIONS

Preheat oven to 400 degrees.
Gently mash star anise, cloves and cinnamon sticks with a mortar and
pestle.
Mix together water and lime juice in a small container..
Combine sugar, apples, mashed spices, mint leaves, lemon zest, 1/2 cup of
lime juice and water, and saffron in a roasting pan. Cover with aluminum
foil and put in oven.
After 10 minutes, add 1/2 cup of lime juice and water. Roast ingredients
for another 10 minutes, then add remaining 1/2 cup of lime juice and water.
Roast for an additional 10 minutes.
Immediately blend ingredients in a food processor or blender until the
ingredients have reached the consistency of jam.
Store jam in jars.
