Pan-fried Pork Chops With Homemade Applesauce

INGREDIENTS

4 Loin pork chops, 1 inch
thick
Salt and fresh-ground
pepper to taste
4 T Unsalted butter
1 T Olive oil
12 Tart apples, peeled and
chopped
1/2 c Water
1 Lemon, zest only
1 T Honey
2 t Cinnamon
1 t Fresh ground nutmeg

INSTRUCTIONS

How to Prepare the Pork Chops:  Season the pork chops on both sides
with salt and pepper. Heat the  butter and olive oil in a 12-inch
cast-iron skillet; place the pork  chops in and saut until golden brown
on one side, about 5 minutes.  Turn the chops over and continue cooking
another 5 minutes or until  done. Remove and keep warm.  How to Prepare
the Applesauce:  Put the apples and water in a heavy-bottomed saucepan,
cover and cook  over medium heat until the apples are soft, 15-20
minutes. Mash  apples with a heavy spoon, leaving some lumps. Stir in
