Papaya and Crab Salad

INGREDIENTS

1 lb Imitation crab, chopped into bite-sized pieces
1 Ripe papaya
1 Red bell pepper
1 Cucumber, split lengthwise and sliced into half circles
2 Scallions, thinly sliced
3 c Fresh spinach, thoroughly washed, stems removed and torn into bite-sized pieces
1/2 c Pine nuts, toasted at 350 degrees until golden, about 15 minutes
2 Limes, Juice of, strained
1 ts Lemon soy sauce (but any soy sauce will do)
4 tb Corn oil
2 ts Freshly grated ginger
1/4 ts Freshly ground black pepper.

INSTRUCTIONS

DRESSING

Peel and seed the papaya. Cut it into 1/2-inch cubes. Seed the bell pepper,
remove the ribs, and cut the pepper into 1/2" cubes. In a small mixing
bowl, combine all of the dressing ingredients and whisk. Place all of the
salad ingredients in a large mixing bowl and pour the dressing over them
just before serving. Toss to combine.
Yield: Made 8 servings.
Note: This tastes great the first day, but does not hold well.
