Papaya Ice Cream

INGREDIENTS

1 Ripe papaya, peeled seeded sliced
1 T Lemon juice
3/4 c Sugar
2 Eggs, beaten
1 c Milk
1 c Half & half, or whip. crea

INSTRUCTIONS

In blender or food processor fitted with metal blade, puree papaya and
lemon juice.  In a medium saucepan, combine sugar, beaten eggs and
milk. Cook and stir over low heat until mixture thickens and coats a
spoon. Add pureed papaya and half and half. Pour into ice cream
canister. Freeze in ice cream maker according to manufacturer's
directions.  Makes 1 quart. Per Serving: 164 calories - 4 g. protein  ~
25 g. carb. - 6 g. fat - 69 mg. chol. - 84 mg. calcium.  From Gemini's
