Parmesan and Walnut Bruschetta

INGREDIENTS

3 oz Parmesan cheese, grated
1/2 c Chopped walnuts
Salt
3/4 c Olive oil
1/2 French bread loaf

INSTRUCTIONS

Heat broiler. Grate cheese. Combine 1/2 cup of cheese, 1/4 cup walnuts and
1/4 teaspoon salt in a food processor. Whir until finely chopped. Add 1/4
cup of the oil and whir until fairly smooth. Cur bread on the diagonal into
1/2" slices. Brush both sides with remaining 1/2 cup oil. Toast bread under
the broiler, about 30 seconds per side. Spread 1 side of each slice with
walnut mixture. Sprinkle with remaining 1/4 cup of cheese. Press remaining
1/4 cup walnuts on the top. Broil until the cheese begins to melt, about 30
seconds.
Per serving: 106 Calories; 8g Fat (72% calories from fat); 2g Protein; 5g
Carbohydrate; 3mg Cholesterol; 124mg Sodium
