Passover Low-Fat Granola

INGREDIENTS

3 c Matzo farfel
1/2 c Shredded coconut
1/2 c Chopped nuts (your choice)
1/4 c Oil
1/3 c Sugar or other sweetener
1/4 ts Salt
1 ts Cinnamon
Grated orange peel to taste
1 c Raisins or other chopped dried fruit

INSTRUCTIONS

Preheat oven to 350 degrees. Combine farfel, coconut and nuts in a large
bowl. Spread onto non-stick cookie sheet. Bake 20 minutes, tossing several
times.
Meanwhile, in a two-quart saucepan combineoil, sweetener and salt. Simmer,
stirring constantly. Add farfel-mixture. Stir till coated evenly. Add
cinnamon and grated orange peel. Spread onto non-stick cookie sheet. Bake
20 minutes, stirring frequently till brown. Remove and cool. Add raisins.
Break up any large chunks with spatula. Stor ein closed container in the
refrigerator until served. Makes 12 servings.
Per serving: calories 217, fat 9 grams, protein 2 grams, carbohydrates 35
grams.
