Pecan Meringues

INGREDIENTS

2 Egg whites
1/4 ts Cream of tartar
1 ts Meringue powder if available; (can be bought at Wilton supply places)
1/8 ts Salt
1/2 ts Vanilla extract
1/2 c Sugar
1/2 c Chopped pecans

INSTRUCTIONS

Preheat oven to 250 degrees. Line a baking sheet with aluminum foil. In a
large bowl, place egg whites, cream of tartar and salt; beat until foamy.
Add vanilla. With beater, set at highest speed; beat until stiff peaks
form, gradually adding sugar. Fold in pecans. Drop by teaspoons onto
prepared pans, about 1-inch apart. Bake until crispy, about 50 minutes.
Turn off oven. Leave cookies in oven for 3 hours without opening oven door.
Store in airtight containers. Makes 4 dozen.
