INGREDIENTS

1 6-ounce chicken breast, boneless and skinless
2 c Mixed salad greens of choice
1/2 c Carrots, shredded
1/4 c Snow peas, fresh
2 sl Tomato
1 Black olive
1 Hard-boiled egg, peeled, quartered
1/4 c Alfalfa sprouts
Salt and Pepper

INSTRUCTIONS

Lightly season chicken breast with salt and pepper. Broil chicken
approximately 5 minutes on each side, until lightly browned and cooked.
Place mixed greens on a large salad plate or bowl. Arrange carrots, snow
peas, tomato slices, black olive, and egg around sides of plate or bowl.
Slcie broiled chicken on bias and place in center of salad. Garnish with
alfalfa sprouts and serve with your choice of dressing. Makes 1 serving.
