Peppered Ham with Parsnip Puree

INGREDIENTS

500 g Parsnips; peeled and diced
; (1lb)
15 g Butter; (1/2oz)
Salt and white pepper
3 Plums; peeled and diced
1 Pear; peeled and diced
1 Apple; peeled and diced
50 g Caster sugar; (2oz)
3 tb Water
25 g White mustard seeds; crushed (1oz)
1 125 gram pac Premium peppered ham

INSTRUCTIONS

FOR THE PUREE
FOR THE MUSTARD FRUITS
Put the parsnips into a pan and cover with water. Bring to the boil and
cook until soft.
Drain off the water, puree the parsnips with the butter and seasoning. Keep
warm.
Meanwhile, put all the fruits into a saucepan with the sugar, water and
mustard seeds.
Heat until the fruit softens and the sugar solution reduces by half.
Serve the ham on top of the parsnip puree with the mustard fruits as a
glaze.
