Perfection Salad

INGREDIENTS

2 Envelopes unflavored gelatin
1 c Cold water
1 1/2 c Boiling water
1/2 c Sugar
1/2 c Cider vinegar
2 tb Fresh lemon juice
1 ts Salt
1 1/2 c Finely shredded cabbage
1 1/2 c Chopped celery
1/2 c Diced sweet green pepper
1/4 c Chopped pimiento
Salad greens; (optional)

INSTRUCTIONS

Sprinkle gelatin over cold water in large heatproof bowl; let stand 1
minute. Add boiling water; stir until gelatin dissolves completely, 5
minutes. Stir in sugar, vinegar, lemon juice and salt. Chill, stirring
occasionally until mixture is consistency of unbeaten egg whites, about 45
minutes. Fold in cabbage, celery, green pepper and pimento. Turn into 6-cup
mold or bowl. Chill 3 hours or until firm. To serve, unmold onto serving
platter and garnish. If desired, with salad greens.
