Pesto Sauce

INGREDIENTS

2 Cloves garlic; peeled
2 c Fresh basil leaves
1 tb Pine nuts; toasted
1/4 c V-8 juice or tomato juice
1/2 ts Pepper

INSTRUCTIONS

Chop garlic in food processor until minced. Add basil and pine nuts and
chop. Add V-8 juice and pepper and puree until smooth. Note: In place of
the V-8 juice, you could use balsamic vinegar, lemon juice or a pureed
roasted red pepper. Add 1 Tbsp. olive oil to make the sauce smoother, and 2
Tbsp. Parmesan cheese if you wish.
