Picante Pork Stew

INGREDIENTS

2 lb Pork
2 tb Olive oil
1 Onion
1 ts Salt
1/2 ts Black pepper
1 cn (28-oz) stewed tomatoes
1 c Picante sauce
1 1/2 ts Thyme leaves
2 Bay leaves
1 lb Potatoes, cut in chunks
1/2 lb Carrots, sliced

INSTRUCTIONS

Brown pork with olive oil. Add onion;cook 2 minutes. Add salt and pepper.
Add tomatoes,picante sauce,thyme and bay leaves. Bring to a boil. Add
potatoes and carrots. Cook until veggies are tender. (60min)
