Grind the cheese and pimentos together in a food grinder. Add mayonnaise
and mix to make a smooth spread.
Notes: I prefer cheddar cheese if I am going to toast the sandwiches and
colby if not. I sometimes add garlic powder, and other spices to taste
would be fine. Yes, I am a southerner.
