Pine Nut And Orange Wild Rice

INGREDIENTS

1 c Golden Raisins
1/2 c Water
1 c Long-Grain And Wild Rice
Uncooked
1/2 c Pine Nuts, toasted
2 T Fresh Parsley, chopped
2 T To 4 Tb Olive Oil
2 T Grated Orange Rind
2 T Orange Juice
1/4 t Ground Pepper

INSTRUCTIONS

Combine raisins and water in a small saucepan.  Bring to a boil;
cover; reduce heat, and simmer 3 minutes. Remove from heat and let
cool. Drain and set aside. Cook rice (with 2 cups water for 20
minutes). Combine rice and remaining ingredients.  Recipe By     :
