INGREDIENTS

1 Recipe Pizza Bread; see * Note
2 c Basic Tomato Sauce; see * Note
(or 2 cups commercial tomato sauce)
1 c Tiny genovese olives
15 Salt-packed anchovy fillets; soaked overnight
; in milk
1 md Onion; sliced paper thin
1/2 c Capers; rinsed and drained
1/2 c Extra-virgin olive oil

INSTRUCTIONS

* Note: See the .Pizza Bread. and .Basic Tomato Sauce. recipes which are
included in this collection.
Preheat oven to 415 degrees. Lightly oil a large (16- by 30-inch) cookie
sheet, or 2 smaller (11- by 17-inch) sheets. Follow instructions for 1
large pizza, but form dough into a large rectangle. Using a rolling pin or
your hands, flatten dough to fit in your cookie sheet. Using finger tips,
poke indentations across entire surface. Spread a thin layer of Basic
Tomato Sauce over surface. Sprinkle with olives. Lay anchovy fillets out
into a pattern. Sprinkle with onions, capers, and drizzle with extra-virgin
olive oil. Place in oven and bake 15 to 20 minutes, until golden-brown on
bottom. Remove and serve hot or cold. This recipe yields 4 servings.
