Pistachio Nut Tea Bread

INGREDIENTS

1 Stick butter
1 c Sugar
2 Eggs
3 c Orange juice
Grated peel (no white attached) of 2 oranges
12 c Self-rising flour
2 c Fresh or reconstituted powdered buttermilk
1 c Whole pistachios

INSTRUCTIONS

Preheat the oven to 350 degrees F. Grease and flour a 9 x 5 x 3-inch loaf
pan. In a large mixing bowl, beat the butter and sugar until well blended.
Beat in the eggs, orange juice, and peel until light. Add the flour,
alternating with the buttermilk. Fold in the pistachios. Pour into the
prepared pan and bake until a skewer inserted into the center comes out
clean, about 1 hour.
Makes 1 loaf
