INGREDIENTS

1/2 c Flour; all-purpose, sifted
2 ts Baking powder
1/8 ts Salt
1 oz Oil
1/2 c Ricotta cheese; part-skim, cold
2 oz Skim milk; cold
1 Egg white; chilled

INSTRUCTIONS

Place the flour, baking powder, and salt in the bowl of a food processor,
process briefly to distribute baking powder evenly. Add the rest of the
ingredients and pulse the machine off and on just until the dough catches.
Gather it into a ball, wrap with plastic, and refrigerate until the dough
is firm, at least 1 hour. The dough may be rolled out at this point and
used to prepare various pastries, as desired.
