Poached Pears with Non-Fat Chocolate Sauce

INGREDIENTS

6 c Water
1 c Granulated sugar
2 tb Freshly squeezed lemon juice
1 Cinnamon stick
1 Vanilla bean
4 Pears; peeled and cored
1 c Water
3/4 c Granulated sugar
1 c Unsweetened alkalized cocoa powder; sifted
1 ts Vanilla extract

INSTRUCTIONS

CHOCOLATE SAUCE
1. In a medium non-reactive saucepan set over medium-high heat, bring the
water, sugar and lemon juice to a boil.
2. Reduce the heat to a simmer, and add the cinnamon stick and vanilla
bean.
3. Place the pears in the simmering liquid, and cook until the pears can be
pierced with a knife, about 15-20 minutes.
4. Drain and cool slightly. Place in small bowl and drizzle with the
chocolate sauce.
How to Prepare the Sauce:
1. In a medium saucepan over medium-high heat bring the sugar and water to
a boil for 1 minute; whisk in the cocoa powder.
2. Add the vanilla extract, and continue whisking until the mixture is
smooth and begins to thicken, about 3 minutes. Let cool for 3-4 minutes.
