Polynesian Style Stir "fry"

INGREDIENTS

1 T Finely minced garlic
1 c Pineapple chunks
1/4 c Pineapple juice
1 c Frozen broccoli
1/2 c Frozen baby peas
1/2 c Frozen green beans
1/2 c Cubed tofu, Chinese 5-spice
style OR regular lowfat
tofu plus 1 tsp. Chinese
5-spice powder
1 c Cooked rice
Soy Sauce

INSTRUCTIONS

Heat pineapple juice in pan with some soy sauce. Add garlic and
"sautee" for 1 minute. Add frozen vegetables. Cook 5 minutes or until
mostly thawed, stirring frequently. Add tofu (and spice powder if
using) and rice. Cook, stirring frequently, until heated through.
Serve immediately with additional soy sauce to taste.  Fast, easy and
