Pork Chow Mein

INGREDIENTS

1 pk Cubed pork mix; thawed, (see recipe)
1 1/2 c Water
3 tb Soy sauce
4 tb Butter or oleo
4 Stalks celery; sliced diagonally, (up to 5)
1 c Thinly sliced fresh mushrooms
1 cn (8 oz.) water chestnurs; drained, thinly sliced
2 c Fresh bean sprouts
4 Green onions; thinly sliced
1 cn (9 1/2 oz.) chow mein noodles

INSTRUCTIONS

In large saucepan, combine pork mix, water and soy sauce. Simmer over low
heat about 5 minutes. In a medium skillet, melt butter or oleo. Add celery;
saute until crisp-tender, about 10 minutes. Add fresh mushrooms and water
chestnuts. Saute 2 minutes, stirring occasionally. Stir into pork mixture.
Stir occasionally over medium heat 5 minutes. Gently stir in bean sprouts
and green onion slices. Simmer 1 minute longer. Serve over chow mein
noodles Make about 6 servings
Almost forgot!! These recipes were from the More Make-A -Mix Cookery by
Karine Eliason, Nevada Harward and Madeline Westover. I have used it quite
a bit and their recipes have been tasty and especially nice to have on hand
when I was still working.
