Pork Loaf with Applesauce Glaze

INGREDIENTS

1 tb Vegetable oil
1 md Onion; finely chopped
1 c Bread crumbs; fresh
1 1/2 c Chunky applesauce
1 Egg
1 ts Sage
3/4 ts Salt
1/4 ts Pepper
1/8 ts Allspice
1 lb Ground pork
1 ts Dijon mustard

INSTRUCTIONS

Directions: Preheat oven to 375F
In a small skillet, heat oil until hot. Add onion and cook over medium
heat, stirring often, until lightly browned, about 4 minutes.
In a medium bowl, combine bread crumbs, 1 c applesauce, egg, sage, salt,
pepper and allspice. Stir with a fork until mixed. Add ground pork and
onions and mix until blended. Pack mixture into a 8x4x2 1/2 inch loaf pan.
In a small bowl, stir together remaining 1/2 c applesauce and mustard.
Spread applesauce mixture over top of loaf and cover pan with aluminum
foil. Place on a baking sheet and bake for 30 minutes. Remove foil and
continue baking until meat thermometer inserted in center of loaf reads
160-165F, about 30 minutes. Let stand 5 minutes before slicing.
