Pork Ribs With A Barbecue Sauce

INGREDIENTS

8 Barbecue-flavoured pork ribs
1 t Olive oil
4 Salad onions, trimmed and
finely
sliced
1 Red chilli, deseeded and
diced
1 T Red wine vinegar
1 397 g, 14oz can chopped
tomatoes
1 T Clear honey
Salt and freshly ground
black pepper

INSTRUCTIONS

Barbecue or grill the ribs on a moderate heat for 20-25 minutes,
turning occasionally. Meanwhile make the sauce; heat the olive oil in
a saucepan add the salad onions and fry for 1 minute. Stir in the
chilli and fry for a further minute. Add the vinegar then stir in the
tomatoes and simmer gently for 5 minutes. Stir in the honey and
seasoning, and simmer for a further 5 minutes, stirring occasionally.
Serve the pork ribs with the barbecue sauce. Delicious accompanied
