Pork Satay

INGREDIENTS

1 lb Boneless pork loin; cut into 3/4" cubes
4 Scallions (3 inches green left on); minced
1 tb Minced peeled fresh ginger
2 ts Minced garlic
1/2 c Soy Sauce
1/2 ts Ground cumin
Finely grated zest and juice of 1 lime

INSTRUCTIONS

Combine all ingredients (except pork) in a mixing bowl. Add pork and toss
well. Cover and let marinate at room temperature for 2 hours. Soak 24 thin
bamboo skewers in water for 1 hour while pork is marinating. Preheat
broiler. Thread 3 pieces of marinated pork on each skewer, leaving a bit of
space between the peices. Place the skewered on a broiling pan. Broil 4"
from the heat source, basting and turning once, until just browned and
cooked through, about 3 minutes per side. Serve hot or warm with peanut
sauce for dipping.
