Pork With Apples And Noodles

INGREDIENTS

10 oz Pork tenderloin, boneless
. cut into 2" strips
2 t Olive oil
1 c Onion, chopped
2 Garlic, minced
1/2 t Paprika
1/2 c Beef broth, low sodium
1 t Cornstarch
2 Granny Smith apples, cored
. and coarsely chopped
1/4 t Salt
pn Ground red pepper
1 Tomato, cut into wedges
4 c Egg noodles, cooked
Parmesan cheese & parsley
. for garnish if desired

INSTRUCTIONS

Place the pork strips on a rack over a tray.  With a vented cover,
microwave on HIGH for 1 minute; set aside. In medium casserole,
microwave oil on High 1 minute. Add pork, onion, garlic and paprika.
With vented cover, microwave on Medium 5 minutes, stirring twice. In
1-cup measure, stir broth and cornstarch until dissolved. Add to
casserole with apples, salt and red pepper. Cover and microwave on
High 4 minutes, stir and add tomato. Cover and microwave on High 3
minutes longer, or until apples are tender. Let stand, covered, 5
minutes. To serve, place noodles on serving plate. Top with pork
mixture; toss to combine. Garnish with parsley, if using.  From
